Onyx Tonics will close its doors at 126 College Street on Wednesday, October 28, and reopen at 77 Pine Street the week of November 9. The new space is less than two blocks from the current one and previously housed a Kestrel Coffee Roasters outpost from March 2022 through mid-April of this year.
Jason Gonzalez, 42, has run the shop for 10 years. He is a two-time United Kingdom coffee-tasting champion. He said the Pine Street site drew him for its "tall ceilings and nice big windows." The new space is slightly smaller than the College Street location. Gonzalez said the smaller footprint will let staff put more attention on coffee and less on pastries. "We're a good coffee shop but a bad café," he said.
Onyx buys single-origin beans from Vermont roasters, including Abracadabra Coffee in Woodstock, Brio Coffeeworks in Burlington, Duchess Coffee in Brattleboro, and little seed coffee roasters in Middlebury. Gonzalez also sells his own bagged beans, including Granja Paraíso 92's orange bourbon variety from Colombia, which he called "floral, aromatic and sweet."
The beans are roasted at Carrier Roasting's Waterbury facility in an electric roaster. Gonzalez said this setup carries environmental benefits compared with gas-powered roasters.
